Fried Udon Noodles "Yaki Udon"

Sauce

30 g dark soy sauce
15 g mirin
15 g rice wine vinegar
4 g sugar
15 g soy sauce
30 g oyster sauce

1/2 onion
1/4 Chinese cabbage (omitted because Mom doesn't like cabbage)
7 spring onions
125 g mushrooms

2 eggs

450 g udon noodles

2 g white pepper
2 g MSG
3 cloves of garlic

15 g sesame seeds

5 g bonito flakes / katsuobushi (dried and smoked bonito)
