Pasta Salad "Italiano" (Italian Style)
Pasta: REY Fussili al bronzo, cook until done, not al-dente, strain, let cool completely
Mini mozzarella balls (one package)
25 g pine nuts (whole, unroasted)
Handful of cherry tomatoes, halved
2 handfuls of arugula, washed
4 dried tomatoes, finely chopped
Dressing (= pesto)
Parmesan and cashews, equal parts, roughly chopped in a food processor beforehand
then add:
Basil and parsley, fresh, equal parts, handful each
with
1 clove of garlic
Olive oil and rapeseed oil
Balsamic vinegar
Sugar
Pepper
Salt
Oregano
Chop everything together in a food processor
