Guancale or Pancetta or Bacon
fry, separate from the fat afterwars, save both

Parmigiano Reggiano / Pecorino, grated
1 egg per person
Bacon fat
mix

Tagliatelle Pasta
cook al dente

Cheese, eggs, fat
Pasta
some pasta water
mix and carefully heat bain-marie style (water bath or double boiler)
salt and pepper to taste
serve when creamy
