Tortiglioni with Italian Sausage "Salsiccia", Peas and Tomatoes

150 g peas (frozen)
cook according to instructions, a few minutes less

200 g Tortiglioni pasta
cook al dente according to instructions. Save some pasta water.

3 sausages
Olive oil
2-3 shallots or onions
fry in a pan

2 cloves of garlic
2 tsp fennel seeds
add and mix

1 tbsp tomato paste
add and mix

50 ml red wine
add and mix

1 small can of diced tomatoes
add and mix

Peas
Pasta
50 ml pasta water
add and mix

8 cherry tomatoes or cocktail tomatoes
20 g Parmigiano, grated
Salt
Pepper
Sugar
add and mix
taste and serve
